While there are many schools and traditions of cooking across the vastness of Creation, the Seven Great Schools of Cooking are seven styles of cuisine favoured by the court of the Scarlet Empress and the scions of the Scarlet Dynasty. Though several of the schools are named for Directions, none are in truth so restricted: while the techniques, ingredients, and recipes of a Great School certainly show significant influence from the region or era for which they are named, they combine these with those favoured by the discerning palates of the Dynasty, and with others from far more distant times and places, to produce a much more cosmopolitan approach to cookery. Some local purists might complain that their dishes have been altered and rendered false, but proponents of the Great Schools argue that their Schools take the essence of such dishes, their perfected aspects, and elevate these by replacing those errors a local chef is forced into by limited knowledge and access, filling those gaps instead with the best Creation has to offer.

Each of the Great Schools provides one of the Sevenfold Resplendent Dishes favoured by the Empress for the most opulent dining occasions.
