Cloud Ear Fungus is a dark brown fungus which grows on the trunks of trees, named for its ear-shaped protrusions.
Cloud Ear fungus is used in cooking for its texture rather than flavour. Raw, it is rubbery with a hint of crispness, and while it loses the rubberyness with cooking the crispness remains.
